My bro-in-law and sister-in-law are coming to visit us this week! We're excited to spend another Saint Patrick's Day together - it's our tradition. And because St Patty's is one of my most favorite holidays, I thought it would be fun to bake our guests some green cupcakes.
Step 1: Using white cake mix, I blended green food coloring into the batter:
Step 2: Fill cupcake tins with the batter
Step 3: Bake at 350 degrees for about 17-20 minutes. It's funny what 'golden brown' looks like on green tinted cupcakes.
At least they still look Kelly green on the inside!
Step 4: Decorate cupcakes - I used whipped vanilla frosting with more food coloring mixed in.
For my second batch, I added some lemon zest for extra flavor. With another kind of frosting, I piped shamrocks on top.
