Autumn Treats


 
I found a new recipe on my AllRecipes app for Cranberry Pumpkin Muffins. So I gave it a whirl, and it did not disappoint! These little Fall-friendly muffins are so scrumptious and perfect warmed up for breakfast with a bit of butter on top. 

 
Ingredients:
 
2 eggs
2 cups white sugar
1 cup pumpkin
1/2 cup oil
2 tablespoons orange zest
2 1/2 cups all-purpose flour
1 tablespoon pumpkin pie spice
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups fresh cranberries, halved
 
* I didn't have orange zest or pumpkin pie spice, but I substituted with a teaspoon of nutmeg and a sprinkling of cinnamon on top of each muffin. I used organic pumpkin and Smart Balance oil.

And look! I baked these autumn inspired brownie cupcakes for my last week at work. In the batter, I used Dark Fudge brownie mix then added mint extract and dark chocolate chips. Uh, YUM.
